The Restaurant Sandikala

Awarded the MICHELIN Green Star in 2021, among the very first in France, Sandikala is a gastronomic destination in the village of Galan, overlooking the peaks of the Hautes-Pyrénées.

Led by Australian-born Luke MacLeod, the cuisine combines the precision of French technique with the intensity of Southeast Asian flavours. Each plate is a meeting of terroir and imagination: river trout, Bigorre black pork, mountain herbs and cheeses are elevated with spices, condiments and aromatics from afar.

Alongside the chef, a passionate young brigade and an attentive front-of-house team shape every detail of the experience — from the gardens to the wine pairings, from the welcome to the art of service.

Sandikala is a living, sustainable gastronomy, where every dish carries the imprint of a place, a season, and a journey.

Wine & Pairings at Sandikala

At Sandikala, wine is an invitation to travel. Each month, Roger, our sommelier, and Emma, our restaurant manager, design pairings that echo the spirit of the menu — surprising, refined, and always in dialogue with the food.

Our cellar is rooted in the Southwest of France, with strong ties to organic, biodynamic, and natural winemakers, while also celebrating masters of traditional craft who shape wines of depth and elegance. Among our trusted partners is Jérémy of Keskonboit in Tarbes, a passionate caviste whose vision reflects our own: wines with character, authenticity, and a sense of place.

But Sandikala’s journey goes further. From the valleys of Bordeaux to the vineyards of Australia and New Zealand, our selection reflects Chef Luke’s personal story — a bridge between hemispheres, cultures, and traditions. Each bottle is chosen not just to accompany, but to inspire: to reveal new flavours, new techniques, and unexpected harmonies.

For us, wine is discovery. It is a way of extending the voyage of the table, of surprising our guests, and of offering encounters as memorable as the cuisine itself.
